So, you may be asking the same question I have…what exactly is a Buddha bowl? Well, I did a little research and basically, it’s just a trend where you create beautiful looking bowls that aren’t only pleasant to look at, but also really good for you too!

From what I gather the only reason it’s called a “Buddha” bowl is that there is a “balance” – whether that is a color balance or a nutritional balance. Either way, these babies are super easy to make, delicious, and a perfect idea for meal prepping!

The recipe comes in 4 parts – 1) Cook your protein, 2) Cook your vegetables, 3) Make your dressing. 4) Assemble your bowls. Actually, I kind of assembled things as I went…but you get the point 🙂

My secret weapon for this recipe is Trader Joe’s Everything but the Bagel Sesame Seasoning Blend.


It’s tastes exactly like an everything bagel and really seasons these bowls well. If you don’t have a jar of this handy…you could easily make it yourself! Here is a recipe I found over on One Lovely Life.

I am using these Buddha Bowls as lunch this week. They heat up well and look pretty impressive!

You can always make them your own by trading out veggies and protein to make it to your taste! Get creative and make something beautiful! 🙂

Low Carb Buhhda Bowls

  • Servings: 4
  • Print

Recipe by: Jamie Boden at My Beautiful Ideal


For the Dressing:

  • 1 clove of garlic, minced
  • 1 tsp of ginger, minced
  • 2 packets of Splenda
  • 2 tbsp soy sauce
  • 2 tbsp dijon mustard
  • 2 tbsp lemon juice


  1. In a large non-stick pan, over medium-high heat, brown the chicken breast until cooked through. Remove from pan and set aside.
  2. In the same pan, over medium heat, cook the spiralized zucchini for 3-4 minutes. Remove from pan and place in the bottom of your meal prep container.
  3. Over medium heat, cook the bell peppers and tomatoes for 6-8 minutes. Remove from pan and place in the container.
  4. Over medium heat, heat the olive oil. Add spinach to the pan and allow to wilt, then add broccoli. When the spinach is wilted, but still has nice green color, remove from pan and place in the container. Keep the broccoli cooking until cooked to desired texture (I like mine to still have a little crunch!) Remove broccoli from pan and place in the container.
  5. Slice the chicken and place in the container.
  6. To make the dressing add all ingredients to a bowl and whisk together.
  7. Divide dressing between the 4 buddha bowls.
  8. Sprinkle with Everything But the Bagel Seasoning.
  9. Allow bowls to cool, cover with lids, and store in the fridge.
  10. When it’s time to eat, head in the microwave for 2-3 minutes!
  11. Enjoy!

Nutrition: Calories 190, Protein 20.3g, Carbohydrate 18.7g, Dietary Fiber 6.5g, Total Sugars 7.9g, Total Fat 5.8g.

Uno dei locali più frequentati

Uno dei locali più frequentati durante tutta la settimana, anche dai celiaci, è sicuramente Springfield, a Talsano (TA).

Springfield fa parte del circuito AFC dell’Associazione Italiana Celiachia, garanzia in più per chi come me vuole mangiare in tranquillità, senza la preoccupazione di possibili contaminazioni.

Il locale ha dedicato a noi celiaci una pagina del menu, con una vasta scelta di pizze e sfiziosità, anche secondi piatti, tutto senza glutine.


Le patatine non possono mai mancare, fresche e croccanti. L’impasto della pizza, con un po’ di grano saraceno che sinceramente apprezzo, è molto buono e sottile, perfetta anche la cottura, nulla da invidiare rispetto alle pizze “normali” insomma.

Consiglio Springfield non solo per l’accoglienza ed il servizio veloce, ma anche per quei genitori che hanno bambini celiaci, certi di poterli farli mangiare come tutti gli altri e di poterli intrattenere con l’animazione organizzata dal locale e a loro dedicata.

Inoltre Springfield organizza tanti eventi ogni mese, per intrattenere e far gustare  nuove specialità ai propri ospiti.

I read an article

I read an article last week…

And by article I mean I saw a meme from buzzfeed on the internet. It was about bloggers and how they post a bunch of boring details about their lives before they (so kindly) let you read their recipe.

And then I burst into flames. Wait, sorry. I read the comments, THEN I burst into flames.

I’m not going to defend bloggers because I know we are all on some level irritating. The thing is, we also spend a ton of time, money, and other resources to create this CONTENT for the world FOR FREE. Sometimes I might get a lil somthin’ from a sponsored post but that’s not what it’s about. It’s mainly because I love making super duper cool and healthy foods and sharing them with the hopes that it will help someone, somewhere eat a keto cookie over a sugar cookie and feel damn good.

I’d like to go on record and say that whoever came up with the hot wings-blue cheese combo was a friggin’ genius!

A quick Google search tells me that Teressa Bellissimo was the original Buffalo wing creator and apparently was also responsible for serving them with a blue cheese dressing and celery sticks.  Perfect from the start, thanks to the fact that the bar she worked in used blue cheese dressing for their house salad.

Since I’m still doing a Keto-Challenge, it’s challenging us to be creative within ketogenic parameters.  How lucky, then, that Holley’s Primal Blue Cheese Yogurt Dressing is low net-carb.

How much more brilliant is it that it’s sooooooo flavorful?!

Actual Probiotic Yogurt

There’s something else.  Something that may change everything for you.  It will probably make you uncomfortable, but maybe it’ll make you excited…

They’ve been lying to us for years…

Lo scorso 22 Settembre abbiamo celebrato le nostre nozze al Castello di San Terenzo, in provincia di La Spezia, in Liguria.
Per la mia celiachia ho preferito avere un ricevimento tutto senza glutine, con aperitivo a buffet per tutti Gluten Free e dolci senza glutine, compresa la torta nunziale.

Per la torta e i dolci, dei delizioni cup cakes colorati, mi sono affidata ad una ragazza carinissima, Valentina Leporati, meglio conosciuta come la Food Blogger Valentina Glutenfree.
Ha collaborato con Schar, azienda Numero 1 del senza glutine e a breve la vedremo anche su Sky in collaborazione con Sonia Peronaci di Giallo Zafferano!

Ha un piccolo negozietto a Sarzana, sempre in provincia di La Spezia, in Via Torrione San Francesco 16, dove sforna dolci e salati ogni giorno.
Organizza anche corsi di cucina senza glutine che io ritengo utilissimi, visto che non è propriamente semplice sfornare qualcosa di davvero buono con le farine deglutinate, o almeno bisogna saperle sceglierle e lavorarle nel modo giusto.

Comunque la mia torta nuziale è stata un vero successo!
Era semplice, come piace a me, con pan di spagna e strati di marmellata ai frutti di bosco e rivestita con un sottile strato bianco di panna vegetale.
Al matrimonio tutti mi hanno fatto i complimenti per questa torta e pure per i cupcakes che sono andati letteralmente a ruba.
E devo ammettere che di celiache eravamo solo in due su le cinquanta persone presenti, ma il senza glutine non ha fermato nessuno e vedere gli invitati chiedere il bis soddisfatti e con la pancia piena mi ha fatto proprio piacere.

1. “Actually, celiac disease isn’t an allergy…”

People often confuse celiac disease with a food allergy, but celiac disease is actually an autoimmune disease. I’ll be honest in saying that I don’t spend time explaining this difference to everyone who confuses celiac disease with an allergy, but I think it is important to recognize the difference and educate others when you can.

2. *Moans* “This. Is. The. Best. (Gluten Free) Pizza. I’ve. Evvver. Tasted.”

People often mistakenly assume that eating gluten free means you’re eating bland, gross or boring foods. But gluten free foods can actually be pretty dang delicious – and when we find something that tastes amazing, we’re definitely going to say so!

And if you have celiac disease and haven’t found a gluten free pizza, pasta, cake, etc. brand or recipe that makes you moan…know that they are out there. And you will be able to say this one day!

3. “No, vegetarian or vegan isn’t the same thing as gluten free.”

I can’t even count how many times I’ve gone into a restaurant, asked about their gluten free options, and been told that they can “easily make any order without meat or dairy.”

Luckily, restaurants are getting better at providing gluten free options and there are some amazing places you can easily eat out gluten free. But if you find yourself rolling your eyes and saying this line waaaaay too often, you aren’t alone!

4. “Sometimes, I’d just reallly like to be able to eat a piece of bread.”

As my long-time readers know, I try to focus on how awesome living with celiac disease can be. But some days, a girl just really wants to be able to stop by any restaurant and dig into a fluffy, gluten-filled pizza, hamburger or warm rolls with butter.

And if you’ve been recently diagnosed with celiac disease, you’ll probably be making this comment pretty often about a variety of foods you miss. But the longer you’re gluten free, the more you heal on the gluten free diet, and the more delicious gluten free options you find, the easier it will be to focus on what you can eat.

5. “Am I bloated because I was glutened? Or just because…?”

For me, one of the hardest parts about celiac disease is how much “glutened” symptoms can vary between people or even gluten exposures. Some celiacs have extreme symptoms like vomiting, diarrhea, etc. Meanwhile, I usually just experience major fatigue and brain fog, and I learned at the Gluten Free Teen Summit that many celiacs don’t have any noticeable symptoms after being exposed to gluten.

As a result, you can sometimes find yourself doubting if you’ve actually been glutened. Especially if, like with me, it took a loooong time for your gut to heal on a gluten free diet and eating gluten free wasn’t enough.

6. “It’s actually not a lifestyle choice. I have to eat gluten free.”

Pros of the gluten free fad diet: it helped encourage the production of more yummy gluten free products.

Cons of the gluten free fad diet: many gluten free options (especially in restaurants) are not actually celiac-safe…and it can be frustrating to constantly have to distinguish yourself from people who cut out wheat to lose weight.

7. “You won’t believe the new product that just came out!!”

Maybe not everyone with celiac disease is a foodie…but I think we can all appreciate when a new, amazing gluten free goodie hits stores!

8. “Thanks for the offer, but I brought my own food.”

Raise your hand if you’re the Tupperware girl or guy in your friend group! When you have celiac disease, taking your own food to dinner parties, college club meetings or any other social event is a regular occurrence. And while it’s awesome when friends or family try to accommodate our dietary needs and make sure we can safely eat along with everyone else, sometimes it’s easier to just bring our own gluten free food to enjoy!

9. “You have celiac too?!?”

Sure, everyone with celiac disease is different and not all of us will get along. But it’s still pretty cool when you find someone who knows first-hand what life with celiac disease is really like.

10. “No, I can’t just pick the toppings off the pizza crust or bread.”

I’m just going to write *insert facepalm emoji here* and leave it at that…

11. “Gluten intolerance and celiac actually aren’t the same thing…”

Just like celiac disease isn’t an allergy, it’s not the same thing as gluten intolerance. I’ve written before about the controversial nature of gluten intolerance (some think it’s not real…and there are some studies that support that claim). But regardless of what someone thinks about gluten intolerance, it’s definitely not the same thing as celiac disease!

12. “Gluten free cookies that everyone says are ammmmazing? That aren’t crazy expensive? Score!” *does happy dance in the grocery aisle*

Nowadays, I can get my weekly groceries for $35 or less, but eating gluten free can definitely be expensive, especially when you’re just starting out. So when we do find some epic gluten free product that is freakin’ delicious AND on sale or not crazy pricey, dance parties in the grocery store aisle are a real possibility.

13. “No, I won’t ever ‘grow out of it.’”

People are usually well-meaning when they offer suggestions on how we can “cure” our celiac disease or try to comfort us by saying we’ll maybe “grow out of it”…but celiac disease is a lifelong condition, and the only treatment nowadays is a strict gluten free diet.

It can feel suuuuper frustrating if you have to keep reminding people of these facts, over and over. But I’d encourage you try to focus on the positives: you may not grow out of celiac disease, but you can live a long, healthy life thanks to the gluten free diet!

14. “Yes, potatoes are gluten free.”

Sometimes, I honestly think I’d save myself a lot of talking if I had a business card that said something like: “I have celiac disease and need to eat gluten free. Yes, rice and potatoes are gluten free.” And I’m guessing most people with celiac disease can relate!

15. “Celiac disease can be freakin’ hard…but I feel so much healthier now.”

Like I’ve shared in previous posts, a celiac disease diagnosis changes waaaay more than just your diet. It changes how often and where you eat out, how spontaneous you can be, how you spend time with loved ones or significant others and much more. And sometimes all these changes are, well, freakin’ hard.

But if the five years I’ve lived with celiac disease have taught me anything, it’s that being able to treat your chronic illness through your diet is a HUGE blessing. True, it took me a while to start feeling better on a gluten free diet. However, I can now (mostly) control my health with how I eat. And that’s pretty cool.

[Question] Fallen down the same pitfall twice, advice needed (How to improve my discipline?)

Hello all. To fully ask the question I desperately need answers to, I should give you all some background on why I’m doing paleo and how for whole long I’ve done it.

Firstly, I have moderate acne, seborrheic dermatitis and some mild digestive issues, mainly constant grumbling and a little gas. As a university student, in my first year of university I ate nothing but junk and would drink excessively. I developed the dermatitis then, and the digestive issues shortly after that. For a month during september, I ate nothing but white meat, broccoli and cauliflower. I don;t know how I was able to keep it that extreme for a month, but I did, and I saw my dermatitis almost vanish, and my acne got a tiny bit better. My digestion was farty, but in a good way I think, because of all the fibre.

However, this strange phenomenon happens to me when I eat healthily for long enough. Because my mood lifts from all the good food, and my skin is not as bad as when I’m eating poorly, my mind goes: “hey, your skin isn’t really so bad is it? And my mood’s so good now too! I’m sure I could be happy just eating what I want!”. And then, I wake up with a rash and a bloated stomach after cheating the next day.

The first time this happened, I was like, well damn, at least I know that for next time. So I started again around the 10th of October, this time just doing paleo, a little less restrictive, but still completely changing everything I eat. This time, it took less than two weeks for things to clear and my mood to lift, but guess what. Yesterday me thought that I KNOW BEST, I KNOW WE CAN EAT PROCESSED JUNK AGAIN!

And so I’m here again, wondering if any of you have quit the diet a certain way in because a mood lift and improvement in symptoms makes you think that you don’t need it anymore. Are there any steps I can take to make sure this doesn’t happen again? Sometimes the pressures of social eating just really get to me, and my brain convinces me over a long period of time that I’m missing out by not eating these foods 🙁

I’m sorry if this is too lengthy for you all, but I just really need to get my feelings out to people that I hope will understand me. I feel like such a failure that this has happened two times now. I know eating paleo makes me feel better in the long run. I’m going to throw out all the bread and treats that I bought yesterday and start anew again.

TL;DR. Paleo improved my mood, skin and digestion to the point where I have TWICE thought I didn’t need to eat that way anymore, only to discover a new skin flare up and wake up with bloating and ample guilt. What can I do to avoid this?
