Not only are they easy to make, they also vary in fillings that can be modified to suit your taste. Better yet, you can freeze pieces to enjoy on a later date or slip into a lunch box to take to work. I’ve been making a ham and cheddar quiche for ages, so I was excited to make a new version with a different combination of ingredients with different proportions. So, let’s get started exploring this delicious dish that’s perfect for people on any diet…except low-fat.

Keto Zucchini Quiche

Keto Low-Carb Zucchini Quiche

Ingredients

  • 1 pound zucchini, thinly sliced
  • 2 tablespoons butter
  • ½ cup red onion, chopped
  • 3 cloves garlic, minced
  • 3 eggs
  • ½ tablespoon dijon mustard
  • 1 ½ teaspoons dried oregano
  • 5 ounces gruyere, shredded
  • ¼ cup Parmesan, grated

Seasoning

  • ¼ tablespoon red pepper flakes
  • ½ teaspoon salt
  • ½ teaspoon pepper

Zucchini Quiche Instructions

  1. First, preheat the oven to 375. Then, thoroughly butter a pie pan.
  2. Slice the zucchini, chop the onions, mince the garlic and set aside. You can slice the zucchini with a knife or a mandolin. I used the mandolin to cut down on time. Watch your fingers!
  3. In a large skillet on the stovetop, melt the butter. Add the onions and garlic and cook for about 1 minute, stirring frequently.
  4. Add sliced zucchini and add a sprinkle of salt (about ½ tsp) and a few cracks of black pepper. Cook, stirring occasionally over medium to medium-high heat, for 3-4 minutes or until zucchini is softened. Remove pan from heat and set aside.
  5. In a separate bowl lightly beat eggs. Add dijon mustard, oregano, red pepper flakes. Whisk until combined, and then gently stir in Gruyere cheese.
  6. Add egg and cheese mixture to zucchini mixture and toss until combined. Place mixture in prepared piecrust and sprinkle Parmesan cheese on top. Bake for 40-50 minutes or until center is set and top is lightly golden.
  7. Cool for at least 15 minutes before cutting. it can be served warm, at room temp, or even cold.

Variations

Since it’s easy to get bored with a simple quiche, it’s easy to experiment with lots of keto variations. For instance, you can substitute different cheeses like Sharp Cheddar, Havarti or Manchego. Additionally you can add ham, bacon, sausage or ground beef crumbles. Be sure to inspect the nutritional information on your ham because most of them have hidden carbohydrates. Cook the meatballs for 3 minutes on both sides.
In another skillet, heat the remaining butter and fry the strips of carrot about 4 minutes while stirring.

Preparation:

Peel the potatoes and boil in salted water for about 20 minutes.
Mix the salad dressing with the yogurt. Add salt and pepper.
Wash and cut the chives and attach it to the cream.
Thaw fish sticks and fry in hot oil.
Drain the potatoes.
Mix the milk and 2 tablespoons of margarine, and add to the potatoes. Make a puree.
Season to taste, with salt and nutmeg.
Wash and drain the rest of the vegetables and put them together with the puree.

 

Vegetables with Prawns:

Prawns are healthy and low in calories and, if mixed with vegetables, this dish becomes terribly delicious and healthy.

Ingredients:

1 pepper
1 zucchini
100 g mushrooms
1 small onion
1 sprig of rosemary
5 tablespoons olive oil
Pepper and salt
1 can of artichoke hearts
Some white balsamic vinegar
1 teaspoon vegetable broth
200 g of prawns
1 small romaine lettuce
1 tablespoon lemon juice

Preparation:

Cut the peppers and zucchini. Clean the mushrooms.
Chop the onions and garlic also finely. Wash the rosemary.
Mix the vegetables, garlic, onion and rosemary with 4 tablespoons of olive oil.
Pepper it to taste.
Put everything on a tray to roast in the preheated oven (electric oven: 200 º C) and simmer about 25 minutes.
Mix the mixture when half the time, cut the artichokes and add.
Mix 50 ml of water with vinegar and broth. Wash the shrimp and dry. Fry in oil for about two minutes.
Add salt, pepper and lemon juice.
Combine the vegetables with the salad mixture and serve with the prawns.

 

Chicken Fillets with Peppers:

With this mixture of chicken fillets and peppers, you will delight your palate and take care of your health.

Ingredients:

230 g of chicken fillets
Olive oil
The juice of a lemon
Parsley
1 clove garlic
½ red pepper
½ green pepper

Preparation:

Cut the chicken breast into fillets and marinate along with parsley, chopped garlic and lemon juice.
Let stand for half an hour.
Peel and chop the onion very thin.
Peel the peppers into strips.
Put oil in a frying pan, add the onion and peppers.
Let them get stuck.
Now add the chicken fillets and fry them together with the onion and peppers.

Peel the onion and finely.

Ingredients:

50 g fresh spinach
50 g onion
½ tablespoons butter
Add a teaspoon of sage, thyme, fresh rosemary
75 g sour cream
125 g puff pastry
Salt and pepper

Preparation:

Preheat oven to 220 degrees.
Clean the spinach, boil them in salted water and cut into large pieces.
Peel and chop the onion very thinly. Put the butter in a pot and sauté the onion in it.
Add the spinach, chopped herbs, and sour cream. Season with salt and pepper.
Spread the base of puff pastry with baking paper and cut two circles (each 12 cm in diameter).
Remove the excess dough from the baking paper and shape it.
Pour the spinach mixture into the dough circles.
Close them and make spinach fritters.
Put them to heat in the oven for 30 to 35 minutes until they are browned.

Everyone can make their own meatloaf using only the ingredients that you like, so it is easy to make new combinations. We are going to propose some recipes that we hope you like.

Before starting with the recipe say that to make the meat pie you can use minced meat according to your tastes. We use half veal and half pork, but you can use only one type of meat if you prefer. It is always better to choose the meat in the butcher shop and get it there at the moment, so we avoid chopping it at home and also make sure that we use fresh meat since the minced meat trays that are already prepared are not always the best quality.

We continue placing the stretched meat the French tortilla so that it is centered on the minced meat and other ingredients. On top of it, we placed several slices of cheddar cheese, and then we distributed the raisins and the chopped olives on top. Put more or less quantity as you like more or less, you can even replace them with others you like more. With all the ingredients already ready, we will go rolling the cake very carefully, for which we will be using the paper of oven to do the best thing possible, pressing each time that we enclose a part of the same.

We should stay at the end the cake well rolled and well pressed. Cut the excess paper oven, leaving only a piece under the cake, so it does not stick, and then put a few slices of bacon on it. Put the meatloaf in the oven, which must already be hot, and bake for about 40-45 minutes, with heat above and below. If the bacon from the top we see that it has already golden brown, remove the heat from above or cover with some foil. Once it is ready, we can serve it, but it is better to leave it for a few hours so that it compacts well and the flavours are mixed at all. When you serve it you can cut it into slices and accompany it with some salsa, you will see how rich it is.
